Monday Munchies ~ Crab Crock Pot Recipe
Each Monday we will kick off the week with a Must have recipe to help get you out of the kitchen and back stitching ASAP!
Crab Crockpot Recipe
Ingredients:
26 ounces crab meat, picked over and flaked
2 cans cream of mushroom soup
6 tablespoons butter
1/4 cup dry sherry
1/2 teaspoon Worcestershire sauce
1/2 cup light cream
Salt and pepper
3 green onions with tops, finely chopped
2 eggs, beaten
Directions:
Place all ingredients except eggs in crockpot. Cover and cook on high for 1 hour. Reduce heat to low and cook 2-3 hours. Stir in eggs during last hour.

Monday Munchies ~ Oreo Cookie Balls

My son is now in kindergarten at a real "grown up" school. He has been in school 2 weeks and I have had A LOT of homework. This week I have to make a dessert for Homecoming weekend. I know the standard easy treats are always cupcakes, brownies, etc. But I wanted to make something different. As I have said MANY times in this blog, I am NOT good in the kitchen! This recipe has 3 ingredients, no cooking time and is pretty quick to make. They come out amazing everytime I make them and people go wild! I have kept the recipe and the name under wraps for a few years now ever since a girlfriend gave it to me. Since I know none of our kids go to school together I feel safe sharing it with you. But be warned....these are addictive...terrribly addictive!
Oreo Cookie Balls
Ingredients
1 package Oreo Cookies, crushed
1 package Cream Cheese (8 ounces), soften
1 package melting chocolate (16 ounces), melted
Instructions
Combine crushed Oreo cookies with softened cream cheese.Roll mixture into small round balls and refrigerate for 1 hour till chill.Use a fork or a toothpick, dip cookie balls into melted chocolate and place on wax paper to dry.Place in an airtight container and refrigerate.

Monday Munchies ~ Crock Pot Chicken Noodle Soup
Each Monday we will kick off the week with a Must have recipe to help get you out of the kitchen and back stitching ASAP!
We are still on the soup kick and with the first day of Autumn tomorrow, my husband has been dying to break out this recipe. Chicken noodle soup is the ultimate comfort food. On a chilly night you can wrap yourself up in your Snuggie (don’t laugh, yes I have one and I LOVE it!) and go to town. The best part about this recipe is that you can cook it all in a crock pot. Now that’s my kind of meal!
Crock Pot Chicken Noodle Soup
Ingredients: 2 ½ to 3 ½ pounds of chicken cut up into small pieces 4 cups water 4 cups chicken broth 1 teaspoon seasoned salt ¼ teaspoon pepper 1 small onion (or leek) chopped 2 chopped carrots 2 stalks celery, chopped ¼ cup fresh parsley, chopped 1 bay leaf 6 ounces noodles
Instructions:
Add all ingredients to the crock pot except the noodles. Cover and cook on low for 5 or 6 hours. Add noodles and cook for another half hour to 45 minutes or cook noodles separately and add before serving.

Monday Munchies ~ Beef Barley Soup

Fall is right around the corner and that means 1 thing at the Leader house ~ SOUP. We LOVE soup in our house. Not canned soup mind you (too much salt and not enough flavor), homemade soup. My husband always makes soup and I love this Beef Barley Recipe. I wish this was a scratch and sniff blog, b/c the smell at my house is amazing! Hope you enjoy this as much as we will tonight!
Beef Barley Soup
Ingredients
1 tablespoon vegetable oil
1 pound lean stewing beef, diced into small chunks
1 tablespoon flour
32 ounces fat free beef stock (comes in a box)
1 diced carrot
1 diced onion
1 stalk of celery diced
¾ cup pearl barley
½ teaspoon thyme
1 can (14 ½ ounces) diced tomatoes
Instructions
1 ~ Add oil to skillet.
2 ~ Sear diced stewing beef in pan.
3 ~ Add flour to pan and stir for approx. 1 minute
4 ~ Add beef stock to pan and stir
5 ~ Add remainder of ingredients
6 ~ Simmer 1 to 2 hours until barley is softened.

Monday Munchies ~ Apple Crisp

Yesterday we had family dinner at my in-laws house.Now I don’t know how it worked when you were growing up but at my husband’s house everything was handmade ~ EVERYTHING.My husband looks forward to visiting his parents often and enjoying his mother’s home cooking.I don’t blame him!He’s certainly not getting the same food in our home.Thank God for leftovers.Dinner was a feast (I expect nothing less) and dessert was exceptional. I normally go straight for the chocolate, but I settled on the Apple Crisp.I so made the right choice!It was amazing!I normally don’t ask My MIL for recipes.Basically because she knows I will never make it, but I had to get this one to post.She’s so excited her recipe is on the internet and hopes your family loves it as much as she loves making it and we love eating it!
Apple Crisp
Ingredients:
5 Large Apples, sliced and peeled
1 cup Brown Sugar
¾ cup Oats (Quaker)
¾ cup Flour, sifted
1 teaspoon Cinnamon
1 teaspoon Nutmeg
1 Stick soften butter
¼ cup apple juice (or water)
Instructions:
Pre-Heat oven to 375 degrees F.Grease a 9X9 inch pan and place ½ of the sliced and peeled apples in the pan.Blend together Brown sugar, Oates, Flour, Cinnamon, Nutmeg and Butter and crumble ½ the mixture over the apples.Layer the remained of the apples over the mixture.Pour the Juice (water) over top and bake for 35 minutes.

Monday Munchies ~ Low Fat Banana Bread

I cannot tell a lie, this is not my recipe. I don't do banana bread. Truth be told, my hubby is the Chef,Baker, all around kitchen expert. I try to gleam bit and pieces of knowledge just watching him work and being around him. The kids LOVE baking bread. We usually eat 5 bananas a day (Yup, 5 people in the house everyone eats a banana a day) so the hubby buys 30 bananas at a time. Sometimes they don't all get eaten and when the kids see ripe bananas they know bread is coming. This is a recipe Deane has used for quite some time and the kids go crazy for it every time.
There a few ripe bananas on the kitchen counter....maybe I'll try it myself and see how it goes, let's hope I don't blow up the house (:
Low Fat Banana Bread
Ingredients
·2 large eggs
·¾ cup sugar
·1 cup ripe bananas, mashed (approx. 3 medium bananas)
·1 tablespoon vegetable oil
·1/3 cup buttermilk
·1 tablespoon vanilla extract
·1 ¾ cup all purpose flour
·2 teaspoons baking powder
·½ teaspoon baking soda
·½ teaspoon salt
Instructions
Preheat oven to 325 degrees.Grease 8 ½ “X 4 1/2” X 2 ½” pan; and dust evenly with flour.Shake out excess.
Mix sugar and eggs in a large bowl until light and thick, using an electric beater.Beat approx. 5 minutes.Add mashed bananas, buttermilk, vanilla and oil.
Sift flour, baking powder, baking soda and salt into separate bowl, mix and add to wet mixture.Beat until blended.
Transfer batter to greased loaf pan and bake approx. 1 hour until golden brown.Test readiness by inserting a tooth pick into the center of the bread.When toothpick comes out clean the bread is done.Place bread on cooling rack and wrap in wax paper when cool.
