Monday Munchies ~ Beef Barley Soup

Fall is right around the corner and that means 1 thing at the Leader house ~ SOUP. We LOVE soup in our house. Not canned soup mind you (too much salt and not enough flavor), homemade soup. My husband always makes soup and I love this Beef Barley Recipe. I wish this was a scratch and sniff blog, b/c the smell at my house is amazing! Hope you enjoy this as much as we will tonight!
Beef Barley Soup
Ingredients
1 tablespoon vegetable oil
1 pound lean stewing beef, diced into small chunks
1 tablespoon flour
32 ounces fat free beef stock (comes in a box)
1 diced carrot
1 diced onion
1 stalk of celery diced
¾ cup pearl barley
½ teaspoon thyme
1 can (14 ½ ounces) diced tomatoes
Instructions
1 ~ Add oil to skillet.
2 ~ Sear diced stewing beef in pan.
3 ~ Add flour to pan and stir for approx. 1 minute
4 ~ Add beef stock to pan and stir
5 ~ Add remainder of ingredients
6 ~ Simmer 1 to 2 hours until barley is softened.
